step by step use Cuisinart Blender to mix to all together: 
  • butter                           180g
  • vanilla sugar               60g
  • egg yolks                   2 pcs
  • salts                              0.5 tsp
  • all purpose flour        200g

preheat the oven to 150 degree and cook for 30 ~35 mins.

Use the hard toase dough recipe

  • 50% High Gluten flour
  • 50% T55 or T65
  • 70% Water
  • 15% leftover dough
  • plue some butter

75gram per dough + 4g butter inside ~ 220 degree for 20 mins

Temperature is the KING!


dough's core temperature is the dominated factor for the dough to develop great flavors.

however,...  forgotten to prepare ice cubes ... Key to cool down the blender ... anyway!



put into the blender, after 5 mins, the dough's temperature started to surge to almost 28 degrees...

cut the blender ... immediately
the gluten was yet to develop thoroughly


rolled it into the bowel
used timing to form hydrolyzation instead


left over Dough


a time for a overnight #dough for tomorrow's bread.
